Easy, vegan 15 minute Chili

A Warming Bowl … in June?

I know, it’s June and here comes a recipe for a super warming Stew-like dish that we would probably prefer on a winter day: A super easy vegan Chili. Made just in 15 minutes.

BUT: the weather had been so cold over the past few days here in Germany, that I’ve been craving warmer bowls like these. And I made this vegan Chili in just 15 minutes! It so easy and quick that I’ve made a big batch. Because in my opinion, Chili or any kind of stew tastes much better once they are considered “leftover”. Nevertheless, you can simply reheat those vegan Chili leftovers, which will make meal preps even faster, the next time you make it.

In addition to being vegan, this stew is also gluten-free. If you want to add some bread slices within a gluten-free version, make sure, these are gluten-free, too.

This Chili is full of flavor, coming from tomatoes, sweet corn, white beans, potatoes and carrots!

Easy, vegan 15 minute Chili

Ingredients
  • 2 cans tomatoes in cubes (2x400g)
  • 1 can tomatoes (1x400g)
  • 1 can baked beans (good quality - e.g. organic; 400g)
  • 350 g potatoes
  • 3 medium sized carrots
  • 2 tbsp oilve oil
  • 1 onion
  • 1 tsp brown sugar
  • 2 tbsp tomato puree
  • 1 can sweet corn (400g)
  • 1 tsp salt
  • pepper
  • 1 tsp bell pepper powder - sweet
  • 1 tsp smoked bell pepper powder
  • 1/4 tsp ground cumin
  • 1/2 tsp ground garlic powder
  • 1/2 tsp chili flakes
  • 2 acovados
  • 4 slices of bread
Instructions
  1. Wash and cut potatoes and carrots (you do not have to peel them - but you can).

  2. Put them in a pot and cover with water. Add some salt and bring to boil. Then reduce heat, add a lid and let cook for about 10 minutes.

  3. In another pot, heat up olive oil. Peel and cut the onion and add to the oil. Let fry and add sugar as well. This will make sure all the sweet flavors are coming out.

  4. Add tomato puree as well as all the spices. Give it a good stir and deglaze with 200 ml water.

  5. Add tomatoes, sweet corn and bakes beans.

  6. Sitr well. Drain the potatoes and carrots once they're done and add as well.

  7. Trasfer into bowls top each with one slice of bread and half a avocado.
