Baked Apricot Oatmeal – vegan & gluten-free

Baked Oatmeal for Breakfast

Have you ever tried a baked oatmeal before? I have to admit, I usually prefer to cook it  in a pot on the stove. But as I got a request over on instagram to create a baked oatmeal recipe I definitely wanted to try it AND I have to say it is super delicious!

Even as a left-over, if you think of making a full oatmeal for yourself. With some coconut yoghurt, fresh berries and popped amaranth.

I went fo an apricot and almond combination. With oats, vanilla and cinnamon. But you can spice it with whatever you prefer or simply with what you have in your pantry.

Baked Apricot Oatmeal - vegan & gluten-free

This is a recipe for a simply and easy baked apricot oatmeal. All vegan, gluten-free and super delicious. Want to make some? Check it out!

Ingredients
  • 300 g almond milk
  • 150 g fine-rolled oats
  • 50 g shredded almonds or almond flour
  • 5 tbsp maple syrup
  • 3 tbsp coconut oil
  • 1 tsp cinnamon
  • 1/2 tsp vanilla powder
  • 6 apricots
Instructions
  1. Preheat the oven to 180℃/350℉. And set a baking dish (8 cm x 20 cm or 3 inch x 8 inch) aside.

  2. In a big bowl mix together oats, vanilla, cinnamon (or your own prefered spices) and shredded almonds by using a large spoon.

  3. In a pot gently melt coconut oil. Add almond milk and maple syrup. Stir well and pour over the dry mixture. Combine by using a spoon.

  4. Wash, cut and remove the pit from the apricots. Cut finely and incorporate into the mixture.

  5. Fill into baking dish and bake for about 40-45 minutes.

  6. Transfer to a cooling rack.

  7. I've served my oatmeal with coconut yoghurt that I've sweetened a little bit with maple syrup. And I also added some popped quinoa and amaranth plus fresh wild strawberries from our garden.

  8. Left-over baked oatmeal can be refrigerated in an airtight containter and holds up to a week. Enjoy 🎉
