Banana Bread – easy, fluffy & vegan
Have you ever made your own banana bread? I have not made it for a long time. BUT ever since I made my first one I got hooked! This was about three years ago.
I’ve been making it over and over ever since. And this recipe here, is a recipe that I’ve basically made more than 50 times! It’s a vegan banana bread, but you can bring it to any non-vegan party and they’ll ask you, how you made it that fluffy. And if you tell it’s vegan, most of them go like: “What? But how about milk and eggs?”
Trust me – you don’t need those. This vegan cake will turn out super fluffy with just some simple ingredients and I’ll show you how!
Recently I’ve been to a party with a vegan challenge. Which meant, everyone had to bring at least one vegan dish! This one here made it to number 3. It lost against something savory and an incredible raw tart.
BUT I realized, that I’ve never published a classic banana bread here on the blog! So here we go.
This is a recipe for the easiest vegan banana bread you'll ever make! It simpe, delicious and super fluffy! Check it out ?
- 200 g spelt or regular wheat flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp vanilla powder
- 150 g maple syrup
- 2 ripe bananas
- 70 g melted coconut oil
- 1 tbsp apple cider vinegar
Start by preheating the oven to 180℃/350℉. Grease a rectangular baking pan with coconut oil. Set aside.
In a large bowl, mix together the dry ingredients.
Peel the bananas and mash witht he back of a fork. Fill in a bowl along with maple syrup, coconut oil and apple cider vinegar. Mix well.
Pour wet ingredients over dry ones and combine with a tablespoon.
Fill into baking pan and bake for about 35 minutes.
Make the toothpick test right before the end of baking. Punch it in and pull it out again. If no batter sticks to it, it's perfectly done ?.
The banana bread holds up in an airtight container at room temperature up to 5 days. You can also slice and freeze it and toast it up whenever you feel like it. I like to top mine with coconut yoghurt and fresh berries.

Easy as that and your banana bread is done! I truly love the simplicity of that. And also the toasting up part: If you have some leftover, simply slice it and freeze it. Whenever you are craving a slice you can pop it in your toaster and it tasted AMAZING! ?
