Easy and fluffy blueberry bread – vegan

Have you ever made a baked fruit bread? Maybe some of you made banana bread before? This blueberry bread is definitely without bananas. Because I know some of you don’t like the taste of baked bananas. So here’s a recipe without any. It’s a super easy recipe. In addition to that the blueberries deliver a super rich taste and a fluffy yet moist texture to the whole loaf. This recipe is not super sweet. It’s rather low in its sweetness. If you prefer this one to be more sweet, simply add a little bit more coconut sugar or maple syrup.

This blueberry bread is super easy, fluffy and even vegan! Try for yourself.

Ingredients
  • 550 g spelt flour
  • 500 ml almond or oat milk
  • 300 g fresh blueberries
  • 100 g coconut sugar
  • 75 g coconut oil + some more
  • 2 tbsp apple cider vinegar
  • 2 tsp baking powder
  • 1 tbsp lemon juice
  • 1/2 tsp baking soda
Instructions
  1. Preheat your oven to 180℃.

    Take 500ml of almond milk or other milk of your choice and mix with 2 tbsp of apple cider vinegar. Let curdle and set aside.

  2. Melt 75g coconut oil in a small saucepan at medium heat. Be careful, it has a very low melting temperature (25℃).

  3. Once the oil turns liquid turn off the heat and add 100g coconut sugar (or any other granulated sugar of your choice) and 1 tbsp lemon juice as well as the milk mixture. Mix and set aside.

  4. In a large mixing bowl combine 550g spelt flour (not the wholemeal one). Add 2 tsp baking powder as well as 1/2 tsp baking soda.

  5. Pour the coconut mixture into the flour mixture and mix while using a large spoon. Be careful not to overmix it. Lumps are allowed. If you overmix the batter, the cake won’t rise.

  6. Add 300g of fresh blueberries and gently fold them in.

  7. Grease a square cake pan with a little bit of coconut oil and pour in the batter.

  8. Bake for about 45-55min. Test with a toothpick. Punch it into your cake and pull it out again. If nothing sticks to it, the cake is done.

  9. You can also turn this recipe into muffins by just taking half the recipe and only bake them for about 12 minutes 🙂
