Popsicles for the win

I don’t know about you but for these past couple of days it’s been super hot in the south of Germany. I won’t complain because this is summer and I am a summer child! That being said even I need a cooling treat from time to time to survive the heat. That’s why I’ve came up with with these café latte popsicles. Not just any recipe! It’s a Café Latte one! And If you now think that drinking coffee on a hot summer day is way to warm then wait until you taste those ice pops! Made from your favorite kind of latte, espresso, coffee or any kind of variation. Because there are sure a lot of variations when it comes to drinking coffee. Am I right?

Café Latte Popsicles

These ice pops are vegan, gluten free, refined sugar free and are super quick make. This makes them the perfectly cooling treat on a hot summer day.

Ingredients
  • 600 ml almond milk
  • 4 Espresso
  • 50 ml maple syrup
  • 1 tsp vanilla powder
  • 4 tbsp coconut oil
  • 4 tbsp raw cacao powder
  • 4 tbsp maple syrup
  • 4 tbsp almond milk
Instructions
  1. Make the espresso as you would always do. If you don't have any, you can substitute with one large and strong cup of coffee. 

  2. Take a bowl, add the espresso, 600 ml almond milk, 50 ml maple syrup and vanilla powder. Mix well.

  3. Pour into your ice pops molds. Mine has room for 8. This is the one I'm using*.

  4. Freeze for at least 4 hours or preferably over night.

  5. Melt the coconut oil at low heat. Add the cacao powder and maple syrup. Stir well until you've reached a smooth texture.

  6. Finally add the almond milk (this is important. Otherwise the chocolate will have lumps.
