Chocolate Almond Espresso Porridge – vegan & gluten-free

Porridge with a twist

If you follow me on instagram you are probably aware of my porridge addiction! Yes, for over the past 5 years this has been my GO TO meal in the morning. And ever since I went vegan about 3,5 years ago I’ve enjoyed the vegan version much more.

Have you ever trief porridge yourself? If easy, simply and usually can be made super fast!

This time I wanted to make a more flavorful version and at the same time I was craving a coffee. There you go real-life-story of how I sometime come up with ideas for a recipe 😅.

This was one creamy, delicious, chocolatey with an almond and espresso kind of flavor! I definitely loves it! Have fun recreation it. ☺️

Super easy recipe for a classic porridge with a special twist. For all the ones who want a little change in their aorning bowl. This is for YOU 💋

Ingredients
  • 60 g fine-rolled oats
  • 1 tbsp chia seeds
  • 1 tbsp flaxseeds
  • 100 ml water
  • 250 ml almond milk or any other plant-based milk of choice
  • 1 tsp cacao powder
  • 2 tbsp almond syrup or sweetener of choice
  • 1 banana
  • 1 tsp coconut oil
  • 1 shot espresso
  • 1 tsp almond butter
  • 2 pieces dark chocolate of your choice
Instructions
  1. Note: I always turn my porridge ingredients into a powder. I love to cook it that way. If you want to, you can do that with the oats, chia seeds and flaxseeds. If not, you can just proceed without that.

  2. In a small pot add the oats, chia seeds and flax seeds. Cook 100 ml water and pour over the mixture. Let sit and absorb the water for about 10 minutes.

  3. Add plant-based milk, cacao powder, espresso shot and 1 tablespoon of almond syrup. Cook well until bubbles rise up and transfer into a bowl.

  4. In a pan slowly melt the coconut oil. Peel and cut banana in half as shown in the picture.

  5. Fry at medium heat on both sides for about 3 minutes.

  6. Deglaze with 1 tbsp maple syrup and top your bowl with the banana slices. Be careful, the banana breaks easily once it's fried.

  7. Top with almond butter, chocolate pieces and enjoy 🎉

Easy Porridge As That

That’s it and I think it could not be more simple. You could even stir together all the porridge ingredients the night before and let it all soak in an air tight container in your fridge overnight. This way you can just grab it the next morning if you’re in a run or simply want to take it with you to work, school, etc.
