Nothing beats snacking without a guilty conscience! Especially if you want something quickly and especially when you’re feeling peckish – especially in the afternoon.
Do you know what I mean? Good! Because I tried my simplest snacks again: energy balls, energy truffles or bliss bites. You have quite a few names. But that shouldn’t stop us from conjuring up these marvels.
Because did you know that they are packed with plant-based proteins? No? Then watch out: These small vegan and gluten-free balls contain more than a quarter of vegetable protein. Thanks to the almond. Plus, these vegan treats are packed with fiber, healthy fats, magnesium, vitamin E, and antioxidants.
Also, I’m just looking at them again right now and – sorry, not sorry, they just look good enough to eat.
Have a look:
Super easy snacking. Healthy, vegan and gluten-free with these protein-rich coconut almond energy truffles 🎉
- 150 g pitted dates
- 80 g blanched almonds
- 25 g grated coconut
- 1/4 tsp vanilla pulp or ground tonka bean
- 200 g vegan chocolate
- 1 pinch sea salt flakes

Place the almonds and coconut flakes in the blender and pulse vigorously a few times.

Add the dates and vanilla or tonka and mix/pulse well until a dough-like mass has formed. From this point on, do not mix any further, otherwise it will become too wet.

If your mass is too dry, simply add 1-2 tablespoons of water.

Scoop out a tablespoon at a time and form small balls. Refrigerate.

Slowly melt the chocolate in a water bath.

Gradually dip the balls into the chocolate and place on a baking sheet or wire rack to dry.

Optionally decorate with chocolate & sea salt flakes.

The energy balls will keep in an airtight container in the fridge for up to 2 weeks.

Have you seen that the coconut almond truffles can be kept in the fridge for a full two weeks? That’s actually always an argument for me when I want to snack more sustainably and healthily. I make the recipe once and just have some of it for a few days. Of course, the balls also make great gifts. Who would you give them to?
