Easy Vegan Whipped Shortbread Cookies

It’s about that time of year again. Suddenly it’s right before Christmas. I mean it’s the same. Each and every year… 😅

So for all of you desperately in the need of a super quick recipe OR for the ones just looking for a nice and easy vegan one: this one is for YOU.

I am so stunned with how these cookies turned out as they are fully vegan and therefore contain no eggs, milk, butter, whatsoever.

They are filled with super delicious chia jam. You can simply make your own or use regular jam of your choice. Or leave out the filling completely. Do what you feel like 🙂

Easy Vegan Jam Filled Whipped Shortbread Cookies

Ingredients
  • 125 g vegan butter, cut into pieces - cold
  • 50 g confectioner's sugar
  • 2 tbsp plant-based milk of your choice
  • 150 g spelt flour
  • 40 g cornstarch
  • 1 tsp pumpkin spice
  • 1/2 tsp vanilla powder
  • 250 g fresh or frozen berries of your choice - for chia jam
  • 1/2 tbsp lemon juice - for chia jam
  • 1 tbsp sticky sweetener of your choice - for chia jam
  • 2 tbsp chia seeds - for chia jam
Instructions
  1. Preheat the oven to 180℃/350℉. Line a baking tray with baking paper. Set aside.

  2. In a large bowl combine vegan butter, sugar and plant-based milk with an electrical hand mixer. You can also use your kitchen machine if you have one.

  3. Add the remaining ingredients and combine well.

  4. Fill into a piping bag with a wide star noozle.

  5. Pipe one cookie at a time onto the baking paper with a little bit of distance betweet each cookie, allowing them to rise.

  6. Bake for about 10-12 minutes until slightly golden.

  7. Let cool on the baking tray.

  8. Prepare the Chia jam in a small pot: Simply defrost the berries if you use frozen ones or warm up your fresh ones, until really soft. Add the remaining ingredients and cook well for about 5 minutes.

  9. Spoon one tsp of Chia Jam on half of the cookies and top with another one. Enjoy!
