Flourless Oat Cookies – vegan & gluten-free

Flourless Cookie Heaven

Cookies! Who doesn’t love them? Vanilla or chocolate or cherry – not matter what kind of flavor! They are easy and delicious and can be made within half an hour. And you can make them for EVERY occasion.

Who is screaming “YES” now? 😂

I simply love them because they are such a delicious treat and in this case even a wheat-free one. Which I really prefer these days. Let’s be hotness: too much guten is never good for our guts. So why not just substitute it for way more delicious ingredients?

I took oat and almond flour to substitute regular flour for these cuties! And you don’t have to go and buy all those thing if you don’t have them around. I made the flour myself by simply pulsing the oats and almond in my food processor. Try it ☺️.

Flourless Oat Cookies - vegan & gluten-free

This is a recipe for the easiest oat cookies you've probably ever seen! Full of flavor but totally gluten-free and vegan!

Ingredients
  • 125 g fine-rolles oats
  • 75 g oat flour (or oats and pulse them into a flour yourself)
  • 50 g almond flour (or almonds and pulse them into a flour yourself)
  • pinch of salt
  • 2 tbsp flaxseed meal
  • 35 g macadamia nuts
  • 70 g almond butter
  • 50 g coconut oil
  • 175 g maple syrup
Instructions
  1. Preheat the oven to 180℃/350℉ and line a baking tray with parchment paper.

  2. In a bowl combine all the dry ingredients (except for teh macadamia nuts) with a large spoon.

  3. In a small pot gently melt the coconut oil.

  4. Add almond butter as well as maple syrup to the pot as well. Stir well.

  5. Add the coconut oil mixture to the bowl with the wet ingredients. Fold in with a spoon.

  6. Roughly chop the macadamia nuts, add to the butter and combine.

  7. Now take a tablespoon, wet it and scoop out a spoon ful from the batter. With wet hands form little balls and put them on the baking tray wiht enough space in-between.

  8. Take the back of a glass ir something similar and flatten the cookies just a bit. They will flatten more during baking.

  9. Bake for about 10-15 minutes. Mine took 13 minutes. You want them to be slightly golden. They'll harden up while cooling down.

  10. Let them sit on the hot tray for about 10 minutes, then carefully (they might still be hot) transfer them to a cooling rack and let cool completely. Enjoy! 🎉

Oat cookies for breakfast

I was trying to think of a name for these cookies. You could also name them “breakfast cookies” as they are basically baked oatmeal in cookie shape 😅.

BUT I thought “oat cookies” was easier and quicker as a word. So here we go! Hope you have fun recreating this one!
