Waffles for the win
Waffles are just pancakes with abs! Seriously I heard that the other day and I had to laugh so hard it hurt my stomach. Which made me remember that I had developed this amazing waffle recipe by accident a few weeks ago and wrote it down for me and for you guys of course. So that we all could have a proper waffle feast. Or a sunday morning with vegan waffles in bed. And let me tell you that recipe is super easy. Once I found the right quantity of the ingredients I saw that too! 😉
It was not an easy task as I wanted them to be gluten free, refined sugar free and vegan. Especially because I needed them to be fluffy and delicious as well. For sure! So I had that recipe. I tested it – made a few adjustments and it was so good that my kids approved as well and we had to have waffles three days in a row. I am not kidding. They can demand waffles like nothing else. Those cuties. But I guess I would be the same 😉
So no more talking about those waffles. Let’s get straight to the recipe.
- 85 g almonds
- 125 g rolled oats
- 200 ml plant-based milk of your choice ⎪I've used coconut-rice milk
- 3 tbsp maple syrup ⎪more to make it sweeter
- 1 tbsp apple cider vinegar
- 1 tsp baking powder
Place the oats and almonds in your food processor. Pulse until it reached a flour like texture.
In a bowl combine the flour with baking powder.
In another bowl mix together all the wet ingredients.
Combine together and let the batter sit for about ten minutes. This is important so that the batter reaches the right consistency.
Make the waffles, one at the time. I've topped mine with coconut yoghurt and fresh fruits.
So just now you should have seen me. I’ve searched high and low for that recipe. I usually have a notebook where I write down all my creations. But I must have written it down on a piece of paper. This is what I sometimes end up doing when my notebook is not where its used to be. Believe me I almost gave up finding the recipe and I was just so happy it wasn’t gone. So here it is now!
Talking about fluffy vegan waffles really makes me hungry. I think I need some right away! Do you know that feeling when you look t food photos and you suddenly get super hungry? Well if that’s the worst part about this job I’ll take it 😉
