Wash and cut potatoes and carrots (you do not have to peel them - but you can).
Put them in a pot and cover with water. Add some salt and bring to boil. Then reduce heat, add a lid and let cook for about 10 minutes.
In another pot, heat up olive oil. Peel and cut the onion and add to the oil. Let fry and add sugar as well. This will make sure all the sweet flavors are coming out.
Add tomato puree as well as all the spices. Give it a good stir and deglaze with 200 ml water.
Add tomatoes, sweet corn and bakes beans.
Sitr well. Drain the potatoes and carrots once they're done and add as well.
Trasfer into bowls top each with one slice of bread and half a avocado.
