This is a recipe for the easiest oat cookies you've probably ever seen! Full of flavor but totally gluten-free and vegan!
Preheat the oven to 180℃/350℉ and line a baking tray with parchment paper.
In a bowl combine all the dry ingredients (except for teh macadamia nuts) with a large spoon.
In a small pot gently melt the coconut oil.
Add almond butter as well as maple syrup to the pot as well. Stir well.
Add the coconut oil mixture to the bowl with the wet ingredients. Fold in with a spoon.
Roughly chop the macadamia nuts, add to the butter and combine.
Now take a tablespoon, wet it and scoop out a spoon ful from the batter. With wet hands form little balls and put them on the baking tray wiht enough space in-between.
Take the back of a glass ir something similar and flatten the cookies just a bit. They will flatten more during baking.
Bake for about 10-15 minutes. Mine took 13 minutes. You want them to be slightly golden. They'll harden up while cooling down.
Let them sit on the hot tray for about 10 minutes, then carefully (they might still be hot) transfer them to a cooling rack and let cool completely. Enjoy! ?
