Ingredients
275gbrown sugar + a little more
250mlof water= 1 cup
1large bunch of fresh thyme
2fresh grapefruits
2Lsparkling water
Instructions
Bring the water and sugar to the boil in a saucepan until the sugar has dissolved well. Then reduce the heat.
Wash and roughly chop the thyme. Add to the sugar solution and let it steep for 2-3 hours with the stove switched off.
Press the grapfrutis.
Dipeen 8 glasses upside down in a bowl of water so that the rim is wet. Then put some sugar in a second bowl and dip the glasses upside down in it. So that every glass has a nice sugar rim.
As soon as the syrup is ready, pour it off using a sieve and pour it into a clean glass.
Add 1-2 tablespoons of syrup per glass and pour the grapefruit juice onto the glasses.
Pour on the soda and serve.
The remaining syrup can be kept in a clean, airtight glass in the refrigerator for up to 4 weeks. Also tastes great in tea or for baking in desserts.
