Vegan Milk

Plant-based milk made from oats, nuts and seeds is easier than I ever thought it would be. I don’t think we need to go into details and health benefits of plant-based milk versus regular milk in this article. But let me tell you that if I’d known it would be that easy I would have started a lot earlier. “It’s never too late” they say and this is why I am sharing this with you.

Over the last couple of weeks my kitchen turned into a testing area for making nut milk, soaking, blending, straining and tasting of course. I pulled up my sleeves aaaand I made my hand dirty for you. Like I said I went all in:

How to start and what you need

First of all you need to decide which nut you want to make your milk from. You can also consider seeds or oats. Toasting them before soaking them adds a richer flavor. You don’t need to do that but it definitely adds some extra quality taste.

You need

  • nuts / seeds / fine-rolled oats
  • filtered water
  • a highspeed blender
  • a clean bottle
  • a bowl
  • a kitchen towel
  • a regular sieve

How to make your own vegan milk from nuts

Almondmilk, Hazelnutmilk, Cashewmilk - you name it. This recipes shows you how to make your own easily.

Servings: 1 liter

Ingredients
  • 1 L filtered water
  • 200 g almonds or nuts/seeds of your choice
  • water for soaking
Instructions
  1. Note: You can toast your nuts/seeds before starting. It will add a super nice flavor. If you prefer not to you can simply skip this step.

  2. Place the nuts in a large bowl and cover with water. Leave to soak for at least six hours. Or simply overnight.

  3. Drain and rinse the nuts and place them in your blender with the filtered water. Blend for about 1-2 minutes.

  4. Take a large bowl. Add a regular sieve on top. Now add your kitchen towel and pour in the milk from the blender. The sieve will prevent the towel from falling down.

  5. Start to fold the ends of the towel together (see picture) and "milk" the mixture.

  6. Repeat until the pulp is all dry. Congratulations! You just made a batch of plant-based milk! 😃

  7. Fill the milk into a clean bottle and store in the fridge. Shake well before you use it.

How to make your own oat milk

Oat milk is super easy and you can simply make your own.

Course: Breakfast, Dessert

Servings: 1 L

Ingredients
  • 1 L filtered water
  • 70 g fine-rolled oats
Instructions
  1. Put the oats and the water in you blender. Blend until smooth.

  2. Take a large bowl, add a regular sieve and lay a kitchen towel on top. The sieve will prevent the towel from falling down during the next step.

  3. Pour your mixture over the towel. Then start to self the ends together so you can "milk" it (see picture).

  4. Milk until it leaves a dry pulp. Congratulations! You just made your won oat milk! It can be stored in a bottle in your fridge. Shake well before you use it.

The froth test

Let’s put the homemade and plant-based milks to a test! I’ve tested almond milk, hazelnut milk and oat milk!

It tastes super creamy but is too thick to be turned into foam. A lighter version might froth but as I already intended for it to be as light as possible I did not want to risk only having water in the end.

It works well for cereal, porridge or baking. It might work great if you add it as cold milk into your coffee but as you see, trying to froth it did not make it look any different.

Place number two goes to toasted hazelnut milk. The taste is simply amazing and I have to say taste wise it was a head to head race between that one and almond milk. The hazelnut milk might have won with some cacao in it… 😉

There is a little froth visible. It works great for a flat white or if you mix it with almond milk. But on it’s own it has just a little frothy layer on top.

Place number ONE goes to toasted almond milk! Not only taste wise but it also turned into the best froth I could get from these three milks I made. You can truly see a lot of bubbles ad in my opinion it’s the one that works best for coffee. But taste is just an opinion, so feel free to try your own!
