Super Juicy Chocolate Cherry Cake – vegan

We did another round of voting on Instagram and this super juicy chocolate cherry cake won and I have to tell you, it turned out amazing.

I always love it when you make suggestions and I can go ahead and just try. I make you happy with it and myself. So a win-win for everyone!

The cake is really juicy, chocolatey and tasty and, above all, vegan. I don’t know which of you is into fruit within the batter, but I think the cherries are really great here. And it wasn’t just me, after I baked the cake it felt like it was gone immediately. Just like that and only a few forks and crumbs were left.

The scent was still in the air, however, and I briefly considered baking another one, but time was too short because I wanted to go to Berlin for the weekend. But that’s a different story (how I love that set of narratives 😅). So we’re sticking with the cake for today and the recipe will come straight away.

Super Juicy Chocolate Cherry Cake – vegan

Super juicy? Really tasty? And full of chocolate? This cake HAS IT ALL and is VEGAN on top of that! More here 🎉

Marie Dorfschmidt – therawberry: therawberry
Ingredients
  • 300 g spelt flour
  • 5 tbsp cocoa powder
  • 2 tsp baking soda
  • 2 tsp baking soda
  • 1 tsp vanilla powder
  • 1 pinch of salt
  • 100 g coconut oil melted
  • 200 g maple syrup
  • 2 tbsp apple cider vinegar
  • 1 glass of sour cherries 360 g
Instructions
  1. Preheat the oven to 180 ℃.
  2. Line a round baking pan ⌀ 20 cm with baking paper and grease the edges with a little coconut oil. Put aside.

  3. In a bowl, stir together the flour, baking powder, baking soda, vanilla, cocoa powder and salt.
  4. In a second bowl, stir together the coconut oil, maple syrup and apple cider vinegar.
  5. Now pour the wet mixture onto the dry mass and fold in quickly with a tablespoon. Do not stir for too long, otherwise the dough will not be as fluffy, but rather firm.

  6. Drain the cherries and fold in as well.
  7. Put the batter in the springform pan and bake for about 45 minutes.
  8. Let cool down and enjoy. In an airtight box, the cake will keep for a few days in the refrigerator.
