Summer is here! Isn’t it?
At first summer seemed to have made its way to us, but then the summer thunderstorms came and now it feels like cozy weather and thick socks again. It’s July 1st!
Do you know what we’re doing there? We will still make some delicious vegan popsicles! Super easy peasy vegan & berry chocolate yoghurt popsicles. Let’s just lure summer with it. Let’s bait him! He’s coming back. And that’s how long the ice cream can freeze in the freezer. Because when our vegan frozen yogurt is really nice and cold, then the delicately melted chocolate is used!
Is there something more tempting than some delicious frozen treats on a hot summer day! Let’s go for that and prepare them as soon as possible so you’ll have them ready when the hot days are finally here. Or maybe it’s already super hot where you are located at? let’s put that in the comments below.
A super easy, vegan summer recipe. Perfect for the hot days. Vegan & gluten free. Berries meet fruity yoghurt & chocolate.
- 400 g vegan coconut yogurt
- 1 tbsp blueberry jam or jam of your choice
- 6 tbsp maple syrup
- 1 handful of fresh blueberries
- 1 bar of dark vegan chocolate

Mix the Jopghurt with the maple syrup in a bowl.

Add the jam and stir roughly.

Now distribute the mixture over 6 ice cream molds.

Spread the fresh blueberries and press in gently.

Put everything in the freezer overnight.

The next day: Break the chocolate into pieces and slowly melt in a water bath.

Cover the ice cream with chocolate and decorate as you like. I took amaranth pops and wild strawberries.

The popsicles can be kept in the freezer for up to 6 months.

Have fun trying. I love vegan yogurt ice cream so much more than one with cream. Simply because there is one thing that is not so fatty in the stomach. Thus, this vegan yogurt ice cream variant is so much more digestible.
