Summer is here and so is the time for super easy and delicious popsicles. A few weeks ago I was standing in the supermarket. That aisle with all those delicious popsicles in every color, shape and variety.
Have you ever checked those ingredients? Well, those are super delicious, no question. But I wanted something more healthy. Nut just for me but for my kids as well. I had the idea of recreating a vegan magnum and this is what I came up with. And that first bite. That chocolate cracking…uhh so delicious. Check it out! ?
Easy vegan chocolate popsicles. Perfect for easy summer afternoons or as the perfect party treat. Found out more here ?.
- 200 ml coconut cream
- 100 ml almond milk
- 1 tsp vanilla powder – can be sustituted with 1/2 tsp vanilla extract
- 6 tbsp maple syrup
- 1 tbsp almond butter
- 2 tbsp coconut oil
- 200 g dark chocolate
In a pot gently melt coconut oil.
Then add almond butter, maple syrup, vanilla powder, almond milk and coconut cream. Gently combine at medium heat.
Prepare 6 popsicle molds and fill in mixture. Let cool. then freeze over night.
Melt the chcocolate by placing it in a bowl or cup and letting that sit for several minutes in a hot water bath.
Take one popsicle at a time and cover with chocolate. Place on a parchment paper to harden up.
Pour the rest of the chocolate into a piping bag with a tiny tip. Or in a plastic bag and cut a tiny tip off.
Then cover the chocolate coverd pops with more chocolate "lines".
Let harden and enjoy right away or freeze until serving.
