Who does not know them? The good old “Snickers”? Delicious bottom layer, peanuts and lots of caramel.
In fact, I’ve never eaten them that often because I knew before how unhealthy they were. Nevertheless, every now and then I indulged myself in such a chocolate bar and I loved it! That was always something special!
Do you know that when you only had something very seldom and then celebrated it totally when you could enjoy it?
Those were “Snickers” for me. And after I wanted to make a vegan cheesecake a la Snickers last week (recipe is coming soon), I first started with the “Snickers” myself.
My chocolate bars are not only vegan, but also gluten-free. But you can’t taste that by a long way. I don’t know either, the assumption is often that gluten-free food can’t be that tasty for a long time.
I want to convince you of the opposite. You are the blast! So I cannot speak for all gluten-free foods. But these bars have knocked everyone out of my socks here. That much is certain!
They consist of a kind of biscuit base, topped with roasted peanuts and rounded off with a layer of caramel. The whole thing is covered in the most delicious vegan chocolate! And to top it all off, I spread roasted peanuts and some sea salt on top.
Here we go!


Super simple, vegan and gluten-free chocolate bars with peanuts – like "Snickers". Super tasty and the best protein snack!
- 100 g pecans for the biscuit layer
- 50 g cashew nuts for the biscuit layer
- 3 tbsp maple syrup for the biscuit layer
- 1 pinch of salt for the biscuit layer
- 25 g pitted dates for the caramel layer
- 3-4 tbsp peanut butter for the caramel layer
- 6 tablespoons of water or more if necessary for the caramel layer
- 1 handful of peanuts
- optional: fine flaky salt to decorate
- 250 g vegan chocolate

Process the ingredients for the biscuit layer into a dough-like mass in the mixer. Add a little water if necessary.

Line a 25 x 10 cm cake tin with baking paper and add the mixture. Press firmly with a spatula or moistened fingers. Put aside.

Wash the mixer and now add all the ingredients for the caramel layer. Mix well until everything is well mixed. The dates do not have to be completely chopped up. “Chunky” is also okay.

Now put the caramel mixture on the biscuit layer. Press down again with moistened hands or with a spatula. Spread 2/3 of the peanuts on top and press down.

Put the whole thing in the freezer for 1 hour.

Meanwhile melt the chocolate.

Take out the bars and cut into 8 bars. Cover with the chocolate, top with the remaining peanuts and decorate with salt. Enjoy the meal!

The bars can be stored in the freezer for up to 6 months and, if necessary, can be thawed within 30 minutes. Have fun!
