Do you already know Cookie Pies?
We know them all: biscuits and cakes. But have you ever tried this together? Cookie Pies?
I baked vegan sugar cookies (yes, unfortunately there is cane sugar in here, but the next recipe will be less sweet – I promise) and conjured up a super simple, vegan 2-ingredient cream and topped it with fresh berries. It can be that simple.
This also sets these vegan cookies apart from normal cookies and makes them much more festive. Nevertheless, as a cookie pie, they require significantly less effort than a classic cake.
Tips
A little tip: the vegan cream cheese is very important here. If the consistency is “too soft”, it will melt. I can highly recommend the vegan cream cheese from the own brand Alnatura (no advertising) because it is very stable. If it is not available in your country, simply check and see wich one is the firmest.
If you want to top the vegan cookie pies with a cream of your choice, you can of course do that too. Concerning the fresh berries, you can take whatever you like or whatever needs to be removed.

Recipe
Super easy, quick and vegan biscuit cakes. Perfect for any party, or just like that! Find the recipe here 🌱.
- 100 g vegan butter room temperature
- 175 g brown sugar
- 150 g flour of your choice – I used spelt flour type 630
- 1 teaspoon Baking powder
- 1 pinch of salt
- 300 g vegan cream cheese
- 4 tbsp powdered sugar
- Berries of your choice for the topping

Preheat the oven to 180 ℃/350℉.

Beat the butter and sugar in a bowl until frothy.

Add all remaining ingredients and mix well.

Now form 10 balls and distribute them on a baking sheet with enough space between them.

Press the balls lightly with the bottom of a glass and bake for 10 minutes. Important: they must look unfinished. Such cookies will get firm more and more after cooling down.

Let the cookies cool completely.

Mix vegan cream cheese with powdered sugar in a bowl, then pour into a piping bag with a nozzle and distribute on the biscuits.

Decorate with berries and serve.
