Christmas is on its way
As the days are getting colder and the nights are getting longer, there’s one thing I always look forward to: Twinkle lights and cookie baking. And yes, it usually exactly in that order. Because these lights have something cozy and comforting. While the cookies can then comfort from the inside 😉.
Have you started baking yet? I accidentally (don’t ask me HOW this is even possible) made 4 different kind if batches of vegan Christmas Cookies yesterday. Well, here’s the first for you. Made with vegan cream cheese to make it extra soft and more nutritious. Enjoy!

- 100 g vegan cream cheese
- 100 g spelt flour
- 100 g vegan butter
- 50 g brown sugar
- 40 g cornstarch
- 2 tbsp plant-based milk
- 1 tsp lemon juice
- 1/4 tsp vanilla
- powdered sugar for decoration - optional

Preheat the oven to 180℃/350℉ (circulating heat). Line one baking tray with baking paper. Set aside.

In a large bowl combine vegan cream cheese, lemon juice and sugar.

Add butter and mix again.

Add remaining ingredients and whisk until well combined.

Cover your hands with flour and then - one at a time - take 1 tablespoon of the batter and form little balls.

Transfer to baking tray and gently flatten them a little bit with the tip of your fingers.

Bake for about 12 minutes until slightly golden.

Let cool on the baking tray.

Cover with powdered sugar if you like.

Once cooled, store in an airtight container.

I used a vegan “Quark” option for this one. Quark is similar to cream cheese but different as it is curdled. I’ve did a poll over on instagram asking for this product in different countries. In the US it’s apparently pretty similar to greek yoghurt. But vegan cream cheese will do a good substitute.
