And this vegan kidney bean stew is intended for just such evenings and days. It not only warms from the inside out, but is also full to the brim with vegetable proteins. And they really fill you up!

This vegan stew is not only delicious, but also made in 10 minutes! You hardly believe that, do you? I don’t believe it anymore either. But I’ve already made the recipe twice and each time it was done in no time and the meal was ready on the table.

And as soon as this vegan kidney bean stew goes, the recipe for you will come just as quickly and I won’t keep you waiting any longer.

Ingredients
  • 2 tbsp olive oil
  • 3 carrots
  • 1/2 leek
  • 1 medium onion
  • 2 cloves of garlic
  • 1 handful of walnuts
  • 2 tbsp tomato paste
  • 1 teaspoon ground oregano
  • 400 ml tomato passata
  • 1 tbsp brown sugar
  • 1 can of kidney beans
  • 3 tbsp yeast flakes
  • 1 tbsp red wine vinegar
  • salt
  • pepper
  • 1/2 teaspoon liquid smoke – if available for a round taste
Instructions
  1. This recipe is enough for 2 people as a stew or for 4 people when used as a sauce over pasta or rice.
  2. Wash the vegetables and cut into small pieces.
  3. Heat olive oil in a pan and lightly fry the vegetables.
  4. Deglaze with brown sugar, oregano, red wine vinegar and tomato paste and sauté briefly.

  5. Drain the kidney beans and add them together with the tomato passata. Bring to a simmer.
  6. Chop the walnuts large and stir in together with the yeast flakes.
  7. Add liquid smoke, if available. That gives a really round taste. I can totally recommend it.
  8. Let simmer briefly and then serve immediately. Caution hot – but extremely tasty!
