Over the past few weeks I’ve shown you on Instagram how you can easily make peanut butter yourself. Followed by how to make gluten-free & vegan Snickers. And only we come to the crowning peanut finish: a complete Snickers cake! Who’s getting hungry for dessert now?

There was already a lot of demand for this recipe on Instagram and so I don’t want to keep you tortured! So we come straight to my recipe for this completely vegan & gluten-free Snickers cheesecake! If you want, you can even make it raw vegan by using roasted nuts. Otherwise, let your creativity run wild. Vegan & Gluten-free Snickers Cheesecake – no bake & super easy
- 100 g salted peanuts ⎮ for the bottom
- 50 g cashews ⎮ for the base
- 25 g desiccated coconut ⎮ for the base
- 1 pinch of salt ⎮ for the base
- 200 g cashew nuts soaked in water for 8 hours, preferably overnight ⎮ for the filling
- 175 g almond milk ⎮for the filling
- 100 g maple syrup ⎮for the filling
- 45 g coconut oil ⎮ for the filling
- 30 g lemon juice ⎮ for the filling
- 25 g salted peanuts ⎮ for the filling

Line the bottom of a round baking pan Ø 20 cm or 8 inch with parchment paper.

Put all the ingredients for the base in the mixer and mix until you have a dough-like mixture. If necessary, add 1-2 tablespoons of water.

Spread the mixture in the baking pan and press down evenly.

Wash the blender. Drain the cashew nuts.

Now put all the ingredients for the filling, except the salted peanuts, in the blender and mix until you have a smooth mixture.

Place the peanuts on the cake base. Pour the filling over it.

Place the cake in the freezer for at least 6 hours. Preferably overnight. Take out 1-2 hours before consumption and decorate chocolate chips or snickers from this recipe.

Once frozen, the cake can be kept in the freezer for up to 6 months.
