Easy vegan pan-roasted granola with fresh and homemade plum compote
Start by first peeling and then mashing the banana with a fork. Add to a big bowl and mix with all the ingredients for the granola by using a spoon.
Take a non-sticky pan and melt the coconut oil at medium to high heat.
Add the raw granola to the pan.
Meanwhile take a cutting board. Wash the plums, remove the seed and cut in small pieces.
Take a small saucepan. Add the plums, maple syrup and cinnamon. Put on high heat.
Stir the granola occasionally. It's done once it has a nice golden and brown color. This takes up to 10-15 minutes.
Let the compote cook at high heat until it liquid part starts to thicken up. Turn off heat and set aside.
Once the granola is ready divide onto two plates, add the compote to each and coconut yoghurt. Top with fresh fruits of your choice and enjoy.
