This is a recipe for a simply and easy baked apricot oatmeal. All vegan, gluten-free and super delicious. Want to make some? Check it out!
Preheat the oven to 180℃/350℉. And set a baking dish (8 cm x 20 cm or 3 inch x 8 inch) aside.
In a big bowl mix together oats, vanilla, cinnamon (or your own prefered spices) and shredded almonds by using a large spoon.
In a pot gently melt coconut oil. Add almond milk and maple syrup. Stir well and pour over the dry mixture. Combine by using a spoon.
Wash, cut and remove the pit from the apricots. Cut finely and incorporate into the mixture.
Fill into baking dish and bake for about 40-45 minutes.
Transfer to a cooling rack.
I've served my oatmeal with coconut yoghurt that I've sweetened a little bit with maple syrup. And I also added some popped quinoa and amaranth plus fresh wild strawberries from our garden.
Left-over baked oatmeal can be refrigerated in an airtight containter and holds up to a week. Enjoy ?
