Note: This recipe yeilds one chocolate banana cake and one vanilla bannaa cake which we'll bake seperately. We'll start by making the chocolate cake.
Start by greasing a 20 cm (8 inch) rectangluar cake pan with some coconut oil. Set aside.
Preheat the oven to 180℃/350℉.
Peel 2 bananas and mash on a plate with the back of a fork.
Trasfer into a bowl along with 70 g coconut oil, 1 tbsp apple cider vinegar and 150 g maple syrup. Stir well and set aside.
In another bowl combine 200 g flour, 1 tsp baking powder, 1 tsp baking soda and cacao powder. Mix with a spoon. Then fold in the banana mixture. Be careful not to over mix as the cake won't get as fluffy. Transfer into the cake pan and bake for about 30-35 minutes.
Let cool and then cut into slices.
Take a cookie cutter and cut one bunny put of each slice. Set aside.
Now we'll make the batter for the vanilla cake. Same procedure, simply with vanilla instead of cacao powder.

Take 1/3 of the batter and spread on the bottom of the cake pan.
Not take the chocolate bunnys and place on top like in the picture.
Top with the rest of the vanilla batter and bake for about 40-45 minutes.
Let cool, then release from the pan and let cool completely in a cooling rack.
